Cheesy fried fava beans

 Following this recipe of Becca Heyes. We ended up later making our Fachos recipe

  • 1/2 Tasse Fava Bohnen in Wasser über Nacht einweichen lassen, dann 30 Minuten kochen
  • Die gekochten Bohnen auf einem Ofenblech ausbreiten und mit etwas Olivenöl einreiben. Mit Salz und anderen Gewürzen bestreuen (z.B. Chili-Pulver). Für 20 Minuten bei 150C im Ofen rösten. 
  • Dann mit Käse bestreuen, und für weitere 15 Minuten im Ofen rösten.

Use vegan cheese: in the USA, the shredded Mexican blend from Trader Joe's works well. In Germany, Simply V Reibegenuss is nice

  • 1/2C fava beans - soak in water overnight, then boil for 30 min
  • Lay the beans in a layer in a pan and sprinkle olive oil, salt, and chili powder
  • Bake for 20 min at 150C
  • Put cheese on top and bake for another 15 min
Variation: fry the cooked fava beans in a pan with olive oil, salt, chili powder, and cheese until the cheese melts

    Mac & Cheese

    I'm trying to recreate the Kraft mac & cheese that I grew up with and so far haven't landed on the holy grail yet, but I'm encountering some great recipes along the way!

    a recipe by Kris and modified by Corina

    Put in a pan and melt together:
    • 2T veganaise
    • 2T margarine
    • 1t mustard
    • 2-4 slices of cheese (Simply V Character)
    Add 3 C pasta (cooked) and mix together.
    Then add:
    • 2T nutritional yeast
    • Ground pepper
    • 1/2-1C cooked fava beans
    • Dacon, red bell pepper, cucumber, cabbage, mango pico de gallo, chili powder
    Variation: for a butter-free, extra cheese-free recipe, Queso Sauce by Forks over Knives is good if you add oil (sunflower) while blending to get the fat content up. Also, make it more liquidy by adding more water

    Thin sauce like Kraft, but taste is still not there (though how would I know when it's been over 20 years since I tasted Kraft?)

    4T nutritional yeast
    4T corn starch
    1T mustard
    2t salt
    250ml Oatley cream
    2T margarine
    Pinch smoked paprika powder
    3 C pasta (Makka Chips in Germany look like the noodles used by Kraft)
    • Put everything (except the pasta) in a pot on medium heat and stir until mixed
    • Add the pasta, garnish with black pepper

    Similar to Annie's sweet potato pumpkin mac & cheese

    0.5 C cashews (soaked overnight)
    1 carrot (boiled until soft)
    0.25 C nutritional yeast
    1t apple cider vinegar
    0.5 C water
    1T margarine
    1t salt
    Pinch nutmeg
    3 C pasta (Makka Chips in Germany look like the noodles used by Kraft)
    • Put everything (except the pasta) in a blender and blend until the chunks are gone
    • Pour into a pan on low heat and add...
    4 slices cheese (a cheddar kind is best - SimplyV Character in Germany)
    Lots more salt (2t?)
    Black pepper
    • Stir until the cheese is melted, then add the cooked noodles. Taste again and add more things as needed
    Note: this recipe actually has protein in it from the cashews (about 20g) and the noodles (about 10g)

    Cheese sauce / cheese




    Cheese sauce

    2T sunflower oil / 2 Esslöffel Sonnenblumenöl
    2T flour / 2 Esslöffel Mehl
    1 stock cube / 1 Würfel Gemüsebrühe
    water / Wasser
    2T nutritional yeast / 2 Esslöffel Hefeflocken
    black pepper / schwarzer Pfeffer
    mustard / Senf
    lime juice / Limettensaft
    optional 4 slices cheze / nach Wunsch 4 Scheiben Kese (Simply V Natur)
    1. Heat sunflower oil in a small pot at medium heat
    2. Stir in flour until it is well dissolved
    3. Add stock cube, and pour the water over it (start with 1/2 cup). Stir to mix everything while bringing to a small boil. The sauce will thicken at this point, so add more water to bring it to a creamy texture (not to solid because the other ingredients will further thicken it). 
    4. Stir in the nutritional yeast, and flavour with the salt, pepper, mustard, and lime juice according to your taste. For additional creaminess, melt in 4 slices of cheze.
    1. Erhitze das Sonnenblumenöl in einem kleinem Topf auf mittlerer Hitze. 
    2. Rühr das Mehl unter bis es keine Klumpen mehr gibt. 
    3. Füge die Gemüsebrühe hinzu, und giesse das Wasser darüber (zum Anfang eine halbe Tasse). Alles gut verrühren, und dann zu einem kleinem Simmern bringen. Die Sosse wird dabei verdicken, also füge mehr Wasser hinzu bis die gewünschte Konsistenz erreicht ist (nicht zu fest da die anderen Zutaten es noch etwas weiter verdicken). 
    4. Rühr die Hefeflocken unter, und würze mit dem Salz, Pfeffer, Senf, und Limettensaft je nach persönlichem Geschmack. Für zusätzliche Cremigkeit, schmelze vier Scheiben Kese hinein.

    Ingredients for cheese base / Zutaten für die Käse-Basis:
    1/2 cup coconut oil / 1/2 Tasse Kokosnussöl
    1 cup water / 1 Tasse Wasser
    1.5 teaspoons sunflower lecithin / 1.5 Teelöffel Sonnenblumen-Lecithin
    1.5 teaspoons kappa carrageen / 1.5 Teelöffel Kappa-Carragena

    Options for flavoring / Optionen für Geschmack:
    Pickled ginger juice / Essigwasser von eingelegtem Ingwer: provides acidity + sweetness
    Lime juice / Limettensaft: provides acidity
    Vinegar / Essig: provides acidity

    Miso-paste / Miso-Paste: provides saltiness
    stock-cube / Gemüsebrühe: provides saltiness
    Salt / Salz: provides saltiness

    nutritional yeast / Hefeflocken: provides herbness
    mustard / Senf: provides herbness

    rice syrup / Reis-Syrup: provides sweetness
    sugar / Zucker: provides sweetness

    pepper / Pfeffer: provides spiciness
    chili powder / Chilipulver: provides spiciness

    In a small pot, melt the coconut oil on low heat. Add the water and your mix of spices, and stir in the sunflower lecithin. Mix thoroughly with a whisk. Turn up the heat, and stir in the kappa carrageen. When the mixture starts to boil, turn down the heat. Leave just below boiling point for 5 minutes, stirring constantly. Pour into a glass bowl, let cool, and set in the fridge. 

    Das Kokosöl in einem kleinen Topf bei niedriger Hitze schmelzen. Das Wasser und die gewünschten Gewürze hinzufügen, und das Sonnenblumenlecithin einrühren. Mit einem Schneebesen gründlich vermischen. Die Hitze erhöhen, und das Kappa Carrageen komplett einrühren. Wenn die Mischung zu kochen beginnt, die Hitze herunterdrehen. Unter ständigem Rühren 5 Minuten lang knapp unter dem Siedepunkt belassen. In eine Glasschüssel gießen, abkühlen lassen und in den Kühlschrank stellen.

    Quesadillas & Tacos

    Per Quesadilla:

    1 tablespoon red kidney beans (ideally the type that is in a spicy sauce)
    1/2 tablespoon vegan cream cheese
    1 teaspoon nutritional yeast
    salt
    chili flakes
    • Mix these ingredients using a fork, smashing the beans, to create a smooth texture.
    • Fill into a tortilla together with olives and vegan cheese. Place in sandwich maker to grill.
    Für jeden Quesadilla:

    1 Esslöffel rote Kidney Bohnen (idealerweise Chili Bohnen in Sosse)
    1/2 Esslöfel veganer Schierkäse
    1 Teelöfel Hefeflocken
    Salz
    Chili Flocken
    • Vermische die Zutaten mit einer Gabel, dabei die Bohnen zerdrücken um eine gleichmässige Masse zu erstellen.
    • Diese Masse wird in einen Torvilla-Fladen gefüllt, mit ein paar Oliven und veganem Käse, und dann in einem Sandwich-Maker gegrillt.

    Corn tortillas
    Chili beans
    Cheese
    Jalapeños
    Broad beans
    • Place small corn tortillas in a baking pan and top with everything in the list above and bake for 25 min (or until the tortilla is almost crispy and the cheese is melted).
    • Top with slaw and serve

    Philly CheeseChick'n Sandwiches

    French baguette
    Daiya mozzarella cheese
    Red bell pepper thinly sliced
    Vegenaise
    Gardein Chick'n Scallopini

    Open the baguette, spread ample Vegenaise on both sides, place only a few thin slices of red bell pepper on one side, cover in cheese.

    Bake in the oven with the chick'n separate until the cheese is melted and the chick'n is hot. Remove from oven, put a piece of chick'n on one side of the sandwich, close, and enjoy!
